Thai Basil Chicken

Servings - 2


Ingredients:-

* 300g chicken

* 3 mushrooms

* 1 handful of mange tout

* 1/2 of a small red onion

* 1/2 of a courgette

* 1/2 of an aubergine

* 1 stick of celery

* 1 carrot

* 1 handful of fresh basil

* 1 handful of kale

* 1 heaped tablespoon of thai red curry paste

* A splash of coconut milk

* 1 packet of Tesco basmati microwave rice

* Fry light



Chuck it in and hope method

1. Spray fry light into pan

2. Chop chicken and add to pan

3. Chop basil and add to pan

4. Chop veg and add to pan

5. Cook until chicken is cooked through (around 10 - 12 minute)

6. Add thai red curry paste

7. Add a splash of coconut milk

8. Mix through for a couple of minutes

9. Place microwave rice into microwave for 2 minutes

10. Serve
