Giant cous cous and chicken salad

· 70g uncooked weight giant cous cous

· 300g chicken

· Garlic paste

· 1 teaspoon dried oregano

· Lemon zest

· 1 courgette

· 2 handfuls of spinach

· 8 tomatoes

· ½ small red onion

· 8 olives

Chuck it in and hope method

1. Add giant cous cous to a large pan of boiling water and cook for the recommended time on the packet

2. Spray pan with fry light

3. Chop and add chicken to pan

4. Add a little garlic paste, dried oregano and lemon zest

5. Use a julienne peeler to slice courgette

6. Chop onion and tomatoes

7. Place two handful of spinach, onion, tomatoes, courgette and olives into a bowl

8. Split all into two

9. Once cooked, drain cous cous and add to pan with chicken

10. Serve ½ salad onto plate top with chicken and cous cous
